Zoella's Funfetti Cupcakes


It's officially baking season!! And since I am not much of a fan of pumpkin I went and surfed the Internet for amazing baking recipes. Now guess what I found, yes that's right Zoella's Funfetti Cupcake recipe and since my mum's birthday was just around the corner why not make them as kind of a birthday cake.

You will need

for the basic cupcake batter:

125g caster sugar
125g self raising flour
2 large free range eggs
125g butter
¼ teaspoon of bicarbonate of soda
1 ½ tablespoons of milk
¼ teaspoon of vanilla extract

for the butter cream icing: 

335g icing sugar
150g unsalted butter
1- 2 tablespoons of whole milk
¼ teaspoon of vanilla extract

Now before you start anything make sure you preheat your oven to 170 degree Celsius. After you've done that get a big bowl and a hand mixer or kitchenaid. Pour all the dry ingredients in first, make sure you sift them in, and then add all remaining ones. Then turn on your mixer on low speed and work it up to a medium to high speed. Make sure everything is combined well and take down the bits on the side of the bowl with a spatula. After everything is well mixed put as many sprinkles in the batter as you like. In the end it should look like this


You can add more milk if it's not smooth enough.

I used a muffin tin filled with nice 'cups' (I guess). Of course you can use a normal spoon to fill the batter into the cups but if you want the perfect amount right from the start use an ice cream scoop. 
Pop them in the oven and let them bake for about 20 minutes.

Before you take them out make sure they are completely done by putting a toothpick in some of them. If no batter sticks to it and it stays clean your cupcakes are ready. Let them cool down completely before putting the icing on, otherwise it'll literally run away.



While the cupcakes cool down prepare the icing. Get a clean bowl and your mixer and beat the butter first until it is smooth, creamy and a lot lighter in colour, it should be nearly white.

When your butter all nice and creamy add the icing sugar in parts and don't start the mixer on full speed, start slow and gradually speed it up, otherwise you'll get a cloud of sugar in your face.
Mix in the vanilla extract and the milk, until it is smooth enough to get through a piping bag. It should look like this


Decorate your cupcakes as you like and add some sprinkles on top to make them actual funfetti cupcakes.
