The Best Pancakes You'll Ever Eat



Hi there! If you love pancakes and you know it clap your hands *claps hands really loud*. Quite recently I went through all my posts to find out which topics are most popular and I noticed that quite a lot of you love recipe posts.
So today I have another one for you. The best pancakes you'll ever eat. 

I love these so much they're so easy and since there is no sugar in the batter you can use a lot of topping without the whole thing getting to sweet.
But let's get started on the batter.

You'll need: 
3 eggs
115g plain flour
1 heaped tsp baking powder
140ml milk
pinch of salt

By the way this is Jamie Oliver's USA style recipe and the batter makes about 8-10 pancakes depending on how big you like them.

Now back to baking. Combine the flour, milk, baking powder and egg yolks in a bowl and mix it through until everything is smooth. In another bowl beat the egg whites and salt till it forms stiff peaks. Then fold the stiff egg whites into the batter.

After you've done that put a pan on medium heat. I personally like to use oil over butter but that's up to you. Anyway pour some of the mixture into the pan. As soon as bubbles start to rise on the top flip the pancake over. I must admit I'm not the best at it, my pan is always either to hot or to cold but one day I'll get it right.

To keep them warm I like to put them on a tray in the oven on really low heat.
As a topping I usually go for maple syrup (the classic) or Nutella but this time I thought I'd go for a rather healthier option and since spring finally started I felt like I needed to use some fruits.
What I used was a cup of Greek yogurt and a cup of strawberries and blueberries each. Of course you can use any kind of fruit. I think this would also be amazing with peaches (I'm actually going to make a Giotto-Peach cake this weekend, if you want to know how I make it let me know in the comments).
To be honest I also used a little maple syrup half way through it all. I mean it's the classic how could I not.




Basically this is the best recipe I've ever tried and believe me I've tried loads. If you decide to try these yourself let me know what you think and what you used as a topping.
